The winery was established in 2021 by the famous winemaker Apostolos Mountrichas of Avantis Estate. The name “Anhydrous,” meaning “without water”, pays homage to the island’s arid environment, where vines thrive despite the lack of rainfall. This resilience mirrors the winery’s commitment to excellence, innovation, and respect for nature.
The philosophy of Anhydrous Winery is to combine traditional winemaking techniques with modern advancements. When Mountrichas first got interested in Santorini's viticulture in 2012, he was smitten by the Assyrtiko grape, an indigenous variety that thrives on the island's dry, volcanic soil. This renowned grape is prized for its minerality, sharp acidity, and ability to reflect the peculiar terroir of the island.
Every bottle from Anhydrous Winery tells a story of harmony between tradition and modernity. Ensuring the wines capture their purest varietal flavors, the team uses everything from modern techniques to centuries-old ones, such as fermenting in clay carafe.
The terroir of Santorini is unique. Rich in ash and pumice, the volcanic soil gives the wines their unique minerality. Grape growing is made difficult yet gratifying by the island's dry, windy climate, bright sunshine, and refreshing sea breezes. These components, along with Anhydrous Winery's experience, produce wines that are not only strong and full of character but also profoundly representative of their place of origin.
The Anhydrous collection embodies the epitome of elegance and complexity from Santorini, boasting the island's indigenous grape varietals, including Assyrtiko, Aidani, and Mavrotragano. The collection features wines such as the crispy and mineral-rich Anhydrous Assyrtiko; the aromatic floral and stone fruit notes in the delicately perfumed nose of the Aidani Blend; and the intense blackberry, dried herbs, with a hint of smokiness in the rare red wine Mavrotragano Reserve, aged to perfection. It ranges from refreshing whites with citrus and saline notes to bold reds that boast layers of dark fruit and spice.
