Assyrtiko is the flagship grape of Santorini and Santo Wines, known for its high acidity, citrusy notes, and mineral characteristics, often reflecting the volcanic terroir, making it one of Greece’s most celebrated indigenous white wines. Alongside Assyrtiko, Athiri and Aidani are other indigenous white varieties that are often blended to create more aromatic, lighter wines.
Nykteri, a unique variety of Assyrtiko, is matured in oak barrels for a deeper, more nuanced character and is prepared using grapes that are harvested at night to intensify its flavors and fragrances. Furthermore, Vinsanto has a long and illustrious history that dates back to ancient times. It is a sweet, dessert-style wine made from sun-dried Assyrtiko, Aidani, and occasionally Athiri. Vinsanto, which is well-known for its strong sweetness and flavors of honey, almonds, and dried fruits, ages oxidatively, which adds to its unique, full-bodied style.
The panoramic view from the terrace offers expansive views of the Caldera, the Volcano, and the Aegean Sea. While the scenery is breathtaking throughout the day, it is most mesmerizing at sunset when the hues of the sky turn the terrace into a cozy and romantic retreat. For those who want to see more of the process behind the wine, there are guided tours through the facilities and background of some of the island's most famous wines. A 15-minute documentary about the history and legacy of Santorini's wine culture has also been put together by Santo Wines.
